Illex illecebrosus, commonly known as the northern shortfin squid, is a Cephalopod mostly caught in northeastern regions of North-East America. This Squid lives from less than one year. It is consumed and reprocessed in Japan :“Surume” (するめ) and used as bait in the US and Canada for longline fishing.

CATCHING SEASON

Wild Caught, from end of June until late September. This specie is subject to strict quota

FREEZING FORM/PACKING

Mostly Block frozen, we produce a high quality land frozen squid. Smaller packaging are available upon request.

SENSORY CHARACTERISTICS

Illex Squid has a mild and a subtle sweetness taste with a firm and meaty texture. The meat has an opaque white color. The color of various part of the body of the squid suggests its freshness
