Flatfish, with both eyes on one side of their body, this sole is commonly called “Flounder” in the US. It is the largest flatfish fishery in the United States.  All our processed sole fillets are MSC certified and the raw material is caught in Alaska.

FISHING SEASON

Year round. Primarily available from March through May and from August through October. Depending on the catching, fillets are available year round

FREEZING FORM/PACKING

Skinless, Boneless, Pin Bone out. IQF (Individually Quick Frozen) or IVP (Individually Vacuum Packed). 10 lb printed or plain cartons – as per your requirement.

SENSORY CHARACTERISTICS

The fillets of Yellowfin Sole are delicate and mild-tasting. It is slightly higher in calories and cholesterol than Alaska pollock, but with a lower fat content. Fillets are thin, with a mild, sweet flavor and a delicate flaky texture.
