Capelin are members of the Osmeridae family of smelts. They are slender translucent olive colored, small-scaled fish that grow to a maximum length of 25 cm (10 in). In Asia, females capelin only is consumed and it is considered a delicacy. The roe content of the fish is important to determine the quality. Capelin roe and is considered as a high value product.
Male capelin is more consumed in Russia and Eastern Europe countries.
FISHING SEASON
Season runs from July to September.
FREEZING FORM/PACKING
Landfrozen, Block Frozen Blast freezing. Capelin are graded by sex as the females containing the roe are more valuable. Once graded by sex they are graded by ct per KG and packed in blocks. Capelin gets sold to export markets where it is dried, and is also used to feed marine mammals. Block frozen 9kg / 10kg /18kg upon request.
SENSORY CHARACTERISTICS
Also known as capelin the flavor resembles herring. Capelin Roe is considered a delicacy in many regions around the world. In China it is also consumed fried.
