Industrial blocks are the traditional way to pack raw material for the seafood industry reprocessing fillets into breaded fish or different products containing seafood.
The Industrial blocks are rectangular or other uniformly-shaped masses of cohering fish fillets or a mixture of fillets traditionally using the same exact dimensions and the same exact weight.
Minced fish flesh used in the manufacture of blocks are particles of skeletal muscle which have been separated from and are essentially free from bones, viscera and skin.
SPECIES AVAILABLE
Minced blocks are usually issued from blocks of Pollock, Cod, Salmon, Sole, Haddock and Tilapia. Any fish processed into fillets can have pieces turned to blocks.
FREEZING FORM/PACKING
Block frozen in a plate. Landfrozen, Blast frozen. Minced fish flesh is usually totally free of Skin, Bones, fat or parasites. Each block is 16.5lbs. Master carton are usually 4 x 16.5lbs. In Europe: the blocks are usually 7.5kg each and packed usually into 3 x 7.5kg master carton.
SENSORY CHARACTERISTICS
A perfect rectangular shape or other uniformly-shaped masses of cohering fish fillets / a mixture of fillets traditionally using the same exact dimensions and the same exact weight.
