Industrial blocks are the traditional way to pack raw material for the seafood industry reprocessing fillets into breaded fish or different products containing seafood.
The Industrial blocks are rectangular or other uniformly-shaped masses of cohering fish fillets or a mixture of fillets traditionally using the same exact dimensions and the same exact weight. Salmon blocks are usually processed from Pink or Chum Salmon. Pink salmon is the smallest and most abundant of the Pacific salmon usually fund in Russia and Alaska. Chum salmon has the widest distribution of any of the Pacific Salmon and is bigger than Pink. It is fish every 2 year alternately with the pink specie.

FREEZING FORM/PACKING
Block frozen in a plate. Landfrozen, Blast frozen. Salmon blocks of fillets are usually Skinless, Boneless, Pin Bone out. The product can be processed also in to Bits & Pieces and Minced Blocks, the fat line could be removed or on. Each block is 16.5lbs. Master carton are usually 4 x 16.5lbs. In Europe: the blocks are usually 7.5kg each and packed usually into 3 x 7.5kg master carton.
SENSORY CHARACTERISTICS
Pink and Chum Salmon is low in oil so it’s generally lean and mild-flavored. It has softer meat than most salmon and has a small flake, rich and Omega free.The color of the flesh is usually 13+.
