Scallops are a cosmopolitan family of bivalves, found in all of the world oceans, though never in freshwater. They are one of the very few groups of bivalves to be primarily free-living; many species are capable of rapidly swimming short distances and even migrating some distance across the ocean floor. Scallops are highly prized as a food source, and are considered worldwide a delicacy.
FISHING SEASON
Mainly from March to December.
FREEZING FORM/PACKING
IQF (Individually Quick Frozen) or BQF (Block Quick Frozen). Shell less and muscular less, only the white meat is commercialized. It is packed upon specifications and a sample is always sent before order.
SENSORY CHARACTERISTICS
Members of the shellfish family, scallops harvested from the sea have a translucent white color and a delicate flavor. Fresh scallops have a light, sweet scent reminiscent of the ocean. If scallops smell fishy, they are no longer fresh. Unless you cook them in rich, creamy sauces or cheeses, sea scallops are low in calories and full of healthy nutrients.
